How to cook chicken breast in pan without drying them out?

Flatten the breasts with a mallet so they are even. Use butter and oil in an oven proof pan. Seal the chicken on each side till browned, "flambe" with some wine or grape juice if you don't drink, add some cream to the pan with 1 tbsp of grain mustard and salt and pepper, slide into a 180C oven for about 10 minutes, or until cooked through.Good luck
